Include this recipe in your diet to increase calcium

Ingredients - 
  • 1 cup thickly grated bottle gourd (doodhi/lauki)
  • 1 cup fresh beaten low fat curd (dahi)
  • 1/2 cup finely chopped mint leaves (pudina)
  • 1/4 tsp roasted cumin seeds (jeera)
  • 1/4 tsp black salt
  • 1/2 tsp sugar
  • 1 1/2 tbsp roasted and coarsely ground flax seed
  • Salt to taste
Method - 
  • Combine the bottle gourd with ¼ cup of water in a deep pan and mix well. Cover and cook on a medium flame for 4 to 5 minutes or till all the water evaporayes. Keep aside to cool.
  • Combine all the ingredients, including the cooked bottle gourd in a deep bowl and mix well.
  • Refrigerate for at least 1 hour.Serve chilled.
Ingredients - 
  • 1/2 cup ragi / nachani flour
  • 1 1/2 tbsp finely chopped spring onions
  • 1/4 cup grated carrot
  • 1 1/2 tbsp fresh curd (dahi)
  • 1/2 tsp green chilli paste
  • Salt to taste
  • 1/4 tsp oil for kneading
  • Ragi (nachani/ red millet) flour for rolling
  • Oil for cooking
Method -
  • Combine all the ingredients in a deep bowl and knead into a soft, smooth dough using enough water. Keep aside for 10 to 15 minutes.
  • Knead again using oil till smooth and divide the dough into 4 equal portions.
  • Roll out each portion into a circle of 125 mm (5") diameter, using a little ragi flour for rolling.
  • Heat a non-stick tava (griddle) and cook each roti using a little oil, till it turns golden brown in colour from both sides.
  • Serve immediately.
